Recipe: Naked Chocolate Raspberry Cake

I’m obsessed with naked cakes at the moment. You know, cakes that only have icing in between layers but aren’t iced all the way around. It’s like you get a sneak peek of the inside of the cake before cutting into it. I also adore the simplistic design and love that they are usually topped with fresh fruit or flowers. Naked cakes are super popular right now for weddings and baby showers especially. 

In my opinion, you don’t necessarily need a special occasion to bake a naked cake. In the words of a wise women, let them eat cake! I grabbed a box of Pillsbury Purely Simple cake and a bag of frosting mix, and preheated my oven! I love that these mixes have no artificial colors, flavors, or preservatives. They make for an easy afternoon of baking. My cake turned out delicious and beautiful. 

INGREDIENTS

2 Cups Raspberries
Pillsbury Purely Simple Chocolate Cake
Pillsbury Purely Simple Buttercream Frosting Icing

DIRECTIONS

Step 1: Head to Target and purchase Pillsbury Purely Simple cake and frosting mix. Make sure to download the Cartwheel app to save 25% on any Purely Simple product at Target (while supplies last). 

Naked Chocolate Raspberry Cake

Step 2: Make cake batter according to box. Divide into thirds and pour into 3 – 6 inch pans.

Step 3: Bake cakes according to package. Once cool, remove cakes from pans and semi-freeze for 1-2 hours in the freezer for easier cutting.

Step 4: Make the frosting according to the package. Mix in 1 cup of raspberries. Place in refrigerator until icing thickens.

Step 5: Once semi-frozen, remove cakes from freezer and use a serrated knife to cut the tops off.

Step 6: Place one cake layer on the cake stand and use a piping bag to pipe icing on top. Place a layer of cake on top of the icing and pipe icing on top of that layer.

Step 7: Place the last layer of cake on top of the icing and pipe icing on top. Wipe any excess frosting off the sides. Add 1 cup of raspberries to the top.
